Eggs Baked in Sweet Potato Clouds

I had some leftover sweet potatoes sitting in my fridge, so I whipped this up for a rainy day brunch at home. Bake or boil a few sweet potatoes and mash them up in a bowl. Form little clouds on a greased baking sheet and make a well in the middle, like you might for mashed potatoes and gravy. Crack an egg into the center and bake at 350 F for about 10 - 15 minutes. Serve immediately with a bit of browned butter or siracha.
